Cerebral Brewing opens its third bar in Denver with Outside Pizza – Diariodelyaqui

Less than five months after opening a second bar in AuroraCerebral Brewing said Monday it will open a third location at 3257 Lowell Blvd. in northwest Denver.

The building – a former church – was previously occupied by. Oasis Brewing, which closed last December after five years.. The upscale venue is right next door to Highland Square.

Cerebral is partnering with Outside Pizza on the 4,000-square-foot space, which will feature the metro area’s third brewery, a second-floor mezzanine and a sunny patio.

Outside Pizza, owned by Ashley and Ryan Grillaert, is known for serving neopolitan-style pies (including the cult favorite, pickle pie) from its former green-and-white trailer at breweries, bars and other venues around town. According to Sean Buchan, Cerebral’s co-founder, the company will build a pizza kitchen where Oasis Brewing’s equipment used to be. Cerebral will not brew beer on site.

“We’ve been big fans of Outside Pizza for years,” Buchan said, adding that Outside has been a regular at Cerebral’s Congress Part location on Sundays.

To celebrate, the two companies – Cerebral is nine years old, while Outside Pizza is three – will host pop-up events on Friday and Saturday, Nov. 22 and 23, from 11 a.m. to 10 p.m., and Sunday, Nov. 24, from 11 a.m. to 9 p.m. The tavern will officially open in spring 2025.

Founded in 2015 at 1477 Monroe Street, Cerebral Brewing is known for its IPAs (especially Hazy), along with barrel-aged stouts, lagers and wild ales and mixed-fermentation sours. It has won numerous awards, several at the Great American Beer Festival, and often appears on local and national lists of Denver’s best breweries.

Cerebral began expanding in 2021, when it purchased. a former furniture warehouse at 9990 East Colfax Ave. so that more beer could be brewed on a larger system. After getting production up and running, Buchan’s opened a temporary bar in the building before closing it briefly while the full bar was being built. It opened last June.
